Chocolate Zucchini Espresso Chip Muffins

These suckers will wake you up and they're 'healthy'!


Ingredients

  • 1 1/2 cup AP flour

  • 1/2 cup cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup canola oil

  • 1/2 cup milk

  • 2 eggs

  • 1 tsp vanilla

  • 1/2 cup sugar

  • 1/4 cup brown sugar

  • 2 cups zucchini, grated

  • 3/4 cup espresso chips

Instructions


  1. Preheat oven to 350F

  2. Spray muffin tray with non-stick cooking spray.

  3. Combine flour, cocoa powder, baking powder, baking soda and salt. Set aside.

  4. Whisk together oil, milk, eggs, vanilla and both sugars until well combined.

  5. Stir in zucchini.

  6. Add dry mixture and stir until just combined, do not overwork.

  7. Fold espresso chips into batter.

  8. Fill muffin tray about 3/4" full and bake 20-23 minutes, until toothpick or knife inserted into center comes out clean.

  9. Cool for 10 minutes, then remove from tray.

  10. Enjoy!
