It's National Avocado Day!

I love avocados!!! Try this super fresh and healthy Tomato Avocado Salad with a greek twist!



Tomato Avocado Salad


Ingredients

  • 2 cups tomatoes chopped to about 1/2 inch (any type of tomatoes you like)

  • 2 ripe avocados, cubed

  • 1 cucumber, sliced

  • 1/4 cup chopped Kalamata olives

  • 1/2 cup feta

  • 1/2 small red onion sliced

  • 1/4 cup white vinegar

  • 1 tbsp sugar

  • Juice of 1 lime

  • 2 tbsp olive oil

  • Salt and black pepper to taste

Additional optional add ins:

  • 1/2 cup chickpeas

  • 1/2 cup black beans

  • 1/2 cup cubed mozzarella

  • Sautéed shrimp

Instructions

  1. Slice red onion and place in bowl with vinegar and sugar. Let soak for at least 30 min (up to 2 hours), mixing every so often to get equal soaking time.

  2. Once onions are pickled and delicious, combine tomato, avocado, cucumber, olives and onion.

  3. Whisk together vinaigrette of olive oil, lime, salt and pepper until fully combined.

  4. Mix gently with salad and enjoy on its own or in a pita pocket!
