It's National Sugar Cookie Day!

Instead of just having a plain sugar cookie today, let's make a Sugar Cookie Pizza!!! It's perfect for summer, using fresh fruit and berries!
Sugar Cookie Pizza
1 roll refrigerated sugar cookie dough
1/2 package cream cheese
1/2 cup powdered sugar
1/2 tsp vanilla
1/2 cup apricot jam
2 cups Kiwi, strawberry, blueberries, mango, raspberry, peach, nectarine (or any fruit that doesn't brown quickly) mix
Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray.
Break up cookie dough in pan; press dough evenly in bottom of pan to within 1/2 inch of edge.
Bake 12-14 minutes or until golden brown. Cool completely on cooling rack, about 30 minutes.
Mix cream cheese, powdered sugar and vanilla until fully combined. Spread over cooled cookie evenly.
Add fruit in any design you want.
Brush with apricot jam for glossy, beautiful finish.
Slice up and enjoy!
