I love shrimp. Shrimp in a Kale Caesar Salad, Shrimp Cocktail, Curry Shrimp, Coconut Shrimp. All Yum! But today I'll share with you a really simple recipe that everyone in the family will love! And it super easy to make!
Shrimp Quesadilla's
-makes 4 quesadillas (folded in half)
Ingredients
20 medium/large size shrimp
2 tbsp butter
2 tsp Mexican spice blend
1/2 tsp salt
2 cloves of garlic, chopped fine
4 medium size soft tortillas
3 cups of cheese (Monterey Jack, Cheddar, Mozzarella - whatever you have on hand)
2 more tbsp butter
Instructions
Season clean, uncooked shrimp with salt and Mexican spice blend.
Melt butter in sauté pan, add shrimp when hot.
Cook 4-6 minutes depending on size of shrimp, adding garlic for the last minute. If pan seems to dry, add another pat of butter or splash of chicken stock so garlic does not burn.
Take shrimp off heat and set aside.
Using same sauté pan on low/medium heat, add 1/2 tbsp of butter and one tortilla.
Add a handful of cheese, spread around.
Add 5 shrimp to half of tortilla (up to you whether you want whole shrimp of chopped)
Flip over the non-shrimp half of tortilla onto the 'shrimped' half.
Flip tortilla halfway through cooking, cook until both sides are golden brown, and cheese is melty.
