Vanilla Pudding is a delicious little treat in itself. But, I like to use it as a simple filling for Eclairs!
Here is my Eclair with Vanilla Pudding filling recipe!
1 stick or 1/2 cup of butter
1 cup water
2 tsp vanilla extract
1 cup AP flour
Instant Vanilla Pudding
Follow directions on packet of Vanilla Instant Pudding, using a little less milk than called for, for thicker filling consistency. Add 1 tsp. vanilla extract for extra vanilla flavor. Refrigerate until ready to use.
Bring the water, butter and 1 tsp vanilla to a boil.
Stir constantly until it leaves the side of the pot and forms a ball. Remove and cool.
Beat in the 4 eggs, one at a time until smooth.
Put dough in piping bag, using large tip (1" or so) and pipe straight 6–8-inch lines onto parchment lined cookie sheets. Bake at 400 degrees for about 25 minutes.
Once cool, cut in half or pipe vanilla pudding into Eclair.
For an even more delicious Eclair, drizzle top with melted chocolate.
