Devil's Food Cake Day was May 19, so I'm a bit behind, but this cake is for my kiddo's birthday! Devil's Food cake is rich in flavor and moist in texture. Devil's Food cakes have changed and had so many adaptions over the years, that it generally means a super, rich chocolate cake with no nuts. So, here is my take on a Devil's Food Cake and Rich Chocolate Frosting. And skull decor, which Maya requested.
Devil's Food Cake

Ingredients
2 cups AP flour
1 tsp salt
1 tsp baking soda
3/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 cup vegetable or canola oil
1 cup hot coffee
1 cup milk
2 large eggs
2 tsp vanilla
Instructions
Preheat oven to 325F.
Sift flour, salt, baking powder and baking soda in large mixing bowl.
Add sugar, oil, coffee and milk, mixing at medium speed for 2 minutes.
Add eggs and vanilla, beating for 2 more minutes, forming a thin batter.
Pour into two 9" round cake pans.
Bake for 30 minutes or until a knife inserted comes out clean.
Cool completely on wire racks.
Rich Chocolate Frosting
Ingredients
2.5 sticks (1 1/4 cup) butter, room temp
3-4 cups powdered sugar
3/4 cup un-sweetened cocoa powder
1/4 tsp salt
2 tsp vanilla extract
3-4 tbsp milk, if needed
Instructions
Cream butter for 2 minutes until light and fluffy.
Add remaining ingredients, except milk. Cream until fully incorporated.
If the frosting needs thinning out, add 1 tbsp milk at a time, until it reaches your desired consistency.
