May is National Salsa Month - Love it!

I have two favorite types of salsas. The one that you get at Mexican restaurants with the free chips. AND fresh Pico de Gallo. I know there are many different versions of Pico, but I am going to share my homemade version with you. And the beautiful thing about Pico de Gallo, is that you can really customize it any way you want.





Pico De Gallo de Kim


Ingredients

  • 2 cups diced, fresh tomatoes (any kind you want)

  • 1 diced yellow pepper

  • 1 diced red onion

  • 1 bunch chopped cilantro

  • 1/2 jalepeno, veins and seeds removed, chopped fine.

  • 1/2 cup fresh squeezed lime juice

  • salt and pepper to taste

Instructions

  1. Add all ingredients to a bowl, toss gently and enjoy!
