Yay! It's National Mac and Cheese Day!!!

Simple Mac and Cheese


· 1 box macaroni

· 1 12oz can evaporated milk

· 3 eggs

· 1 stick of butter (1/2 cup)

· 2 cups shredded cheddar cheese

· 1 cup shredded mozzarella

· 2 tbsp feta cheese

· 1 cup provolone or swiss cheese

· ½ cup smoked gouda

· 2 tsp salt

· 2 tsp black pepper

· 2 tsp taco seasoning

(Panko topping is optional)


1. Preheat oven to 350F

2. In large pot, cook macaroni as per instructions, salting water with 2 tsp of salt.

3. Drain and return to warm pot.

4. Ad butter, mix until melted.

5. Season with remaining salt, pepper and taco seasoning.

6. Add half of cheddar and all other cheeses, mix well.

7. Add eggs and evaporated milk, mix well.

8. Pour into 9”x13” greased baking dish. Top with remaining cheddar.

9. Bake 40-45 minutes until top is golden brown.
